VEGGIE & SEAFOOD LINGUINE

Hey Guys! Y’all got so excited when I shared this last night, so I knew I needed to post the recipe right away! I’ll definitely do a cooking demo on this ASAP over on my Instagram!

But until then, here is this SUPER EASY and even more YUMMY recipe!

INGREDIENTS

  • 1/2 pound linguine noodles
  • 1/3 pound fresh scollops (about 10 medium scallops)
  • 1/3 pound fresh shrimp, peeled with tail off
  • 1 bunch of broccolini
  • 1 small zucchini
  • 1 14oz can of diced tomatoes in basil garlic & oregano, drained
  • 2 tbsp minced garlic
  • evoo
  • salt

DIRECTIONS

Start by bowling a pot of water for your linguine. Once at a rolling bowl, add good amount of salt and 1/2 a pound (box) of linguine. Cook al dente ( 1 minute less than recommended on box).

While pasta is cooking, chop your zucchini and broccolini into bite size pieces and set aside. Heat olive oil in large flat frying pan (enough to coat the bottom of them pan) then add minced garlic and veggies. Sauté 2-3 minutes on high/medium heat, then add can of tomatoes and sauté an additional 2 minutes.

In the same frying pan, push all your veggies to one side to make room to add your shrimp and scallops on high heat. (if you don’t have room in your pan you can take out your veggies and set aside until it’s time to mix it all together). Cook 2-3 minuets on each side, flipping back and forth is just fine! Cook until you get a firmer texture and shrimp is pink! Then mix together with veggies.

By this time your pasta should be cooked! Scoop pasta out of water and add directly to your frying pan with veggies and seafood! Also add about a cup of your salty pasta water and another drizzle of evoo to the pan. Toss all together on medium heat, and let simmer for about 5-10 minutes, or until liquid is almost completely gone!

A little tip – the liquid from the veggies and pasta water is what continues to cook the pasta and give it all it’s flavor! And as the liquid thickens it acts as your “sauce”!

Josh and I both said this was probably our favorite pasta dish I’ve ever made! It was sooo good and FRESH! Reminded us of being in Italy!
