This recipe is great for those weeks you need to recover from having 10 cheat meals (days) in a row… I know you know what I’m talking about! This clean salad is so delicious and refreshing for when you’re trying to get back on the right (health) track!
Here’s what you’ll need!
– 6 oz of hand wilted kale**
– 1/4 cup chopped cilantro
– 1/2 a seedless cucumber, diced
– 1/2 large tomato, diced
– 1 cup cooked quinoa
– 2 heaping tbsp canned organic black beans
– 2 tbsp sunflower seeds
– 1/4 cup dried cranberries
– 1/2 tbsp evoo
– 1/2 tbsp lemon juice
– salt to taste
**Hand wilted kale – Here’s a trick to soften your kale. Tear kale from the steams into bite size pieces and massage in your hands for about 2 minutes. That’s it! 🙂
Just mix all ingredients together and chill in refrigerate for at least an hour. Keeps for about 3 days.
