– Sweet potato, diced
– Onion, diced (optional)
– Tony’s Creole Seasoning (as much or as little as you’d like – to taste)
– Extra Virgin Olive Oil
Peel skin off the sweet potato and dice. Do the same with onion (I use about an 1/8 of an onion per potato) – not pictured. Heat Olive Oil in skillet over high heat. Once oil is hot, add diced potatoes, onions, and seasoning. You want the outside of the potatoes to brown and get that nice crispy texture but we don’t want them to burn, so stir frequently. Once they have a nice golden brown texture, reduce heat and let them finish cooking to desired texture.
