– Gluten free spaghetti noodles
– 1 medium zucchini (and veggetti tool)
– Grilled chicken (I get the Tyson ready grilled for a quick prep time)
– Diced tomatoes (canned or fresh)
– 1 jar pesto
– Reduced fat feta
While waiting on large pot of water to boil, shred zucchini with Veggetti tool (instruction on packaging, SUPER easy). Once water comes to a boil add spaghetti noodles. Once noodles are about 2 minutes away from being done add your shredded zucchini. Toss together while cooking the remaining 2 minutes. Once completely cooked drain water and add noodle/zucchini mixture back to pot. Now add your jar of pesto and diced tomatoes, mix together. Place desired amount in each person’s bowl and top with chicken (if you use the tyson ready chicken, warm up in microwave for about a minute first) and feta!! One of the easiest meals you’ll ever cook! Hope you enjoy!!
